Fresh local berries are a treat during summer, but frozen berries are terrific resource throughout the year. They work perfectly in a simple dessert sauce. In addition to cheesecake, you can use this sauce as an accompaniment to pancakes or ice cream or yogurt.

INGREDIENTS
4 cups frozen unsweetened or fresh blackberries fresh blackberries
1/3 cup black currant juice or blackberry juice or water
3-4 tablespoons sugar
2 teaspoons cornstarch
4 teaspoons lemon juice

​PREPARATION
Place blackberries, black currant juice (or blackberry juice or water) and sugar in a medium saucepan. Bring to a simmer, stirring often, over medium-high heat. Mix cornstarch and lemon juice in a small bowl; add to blackberry mixture, stirring constantly, until sauce has thickened. 

Yield: 2 ½ cups/12 servings.

Per serving (with 3 tablespoons sugar): 45 calories, 0 g protein, 11 g carbohydrates, 2 g fiber, 0 g total fat, 0 g saturated fat, 0 mg cholesterol, 0 mg sodium.
